Yikes! I have been slacking terribly in the wine-and-cocktails department, folks. I apologize. But I’d like to think my big international move (yes, Canada-to-the-US counts as international, dangit) excuses me somewhat.
You might think after that apology I’d have a great new cocktail recipe or a fabulous wine to share. Well … not really. I’m still trying to catch up on various things so this week’s entry is a bit of a cheat. I’m sharing a favorite cocktail I haven’t made in a while: the Watermelon Margarita, which I found in (of all places) Cooking Light.
If a margarita with ripe summer watermelon sounds delicious, I can tell you that it tastes even better than it sounds! It’s sweet and slightly tart and goes down very, very easy (read: watch your consumption!).
I also have a fun variation to suggest. If you make the recipe as directed, you’ll end up with a liquid margarita that should be served over ice. My genius husband came up with the idea of freezing the watermelon before blending it and skipping the ice altogether. The result is a delicious frozen drink with a smoothie-like taste and texture. I’m not normally a frozen-drinks lover and even I thought the frozen watermelon margarita was amazing.
